Tuna/Veggie Patties
1 can Tuna
2-3 Egg Whites
1 T. Olive Oil
1 t. Balsamic Vinegar
about a cup of raw diced veggies-anything you like (carrots, broccoli, cauliflower, celery, onion...)
dash of different spices (salt, pepper, oregano, onion/garlic powder, parsley flakes...)
Mix all above ingredients together and saute in a heated skillet (med-high heat). I smash the mixture to form a thick pancake, then I cover the pan and steam the mixture for about 5 minutes. Take off lid and fry on each side till browned. For a healthy tuna dish it is delicious!
Spicy Sweet Potatoes
Even my boyfriend (who doesn't like sweet potatoes) loves this. First find a good recipe for spices used to make blackened catfish. I make a lot of spicy meals so I quadruple my recipe and put it in its own shaker. Now find some thicker sweet potatoes/yams-it works best if they aren't the skinny little ones. Slice the sweet potato in about 1 inch thick slices (like thick potato chips) but leave the skin on.
Take a large non-stick skillet and place in a single layer on the bottom. Add approx. 1 Cup water and 1 T. Olive Oil, cover on med-high heat and boil about 5 minutes until potatoes are soft. The water shouldn't cover the potatoes and if the potatoes aren't cooked before the water steams off just add a little more. Once softened, remove cover, sprinkle potatoes with spicy mixture, keep an eye on them and brown them on each side, still over med-high heat. I like mine pretty dark but you can play around with it. You can take off the skin at this point but if you do it earlier the potatoes start to fall apart.
It's a great dish and once you have it down it is very easy. I've tried it with a variation-trying to make it with cinnamon and splenda...didn't work out as well.
